Emily's famous crunchy granola recipe

 

We make this granola regularly in our house. It’s super tasty, very customizable and simple to make – but, I also have to add this disclaimer: It’s super easy to burn and the cooling process is gruelingly long. That said, if you pay attention to the oven and can withstand the amazing smell as it cools, you’re in for an amazing, crunchy granola treat.

We like to have this granola on hand during the week for snacking. It’s great addition to some of those pre-workout snacks I mentioned in a previous post and it’s also a great topper for smoothies, yogurt bowls, chia pudding, and oats too.

I’m not going to drone on and on about it because I know you’re only here for the recipe. Before you start cooking, read these pro tips:

  1. Low and slow: Set your oven between 300°F and 325°F, no higher. If your oven is usually quite powerful or if your rack is close to the top burner, opt for the lower end of that temperature range.

  2. Pack it tight: Pack the granola down super tightly before baking. This is going to give you those crunchy clusters you desire.

  3. Let it cool completely! This is truly the hardest part but it’s important if you want those clusters.

Emily's famous crunchy granola recipe

serves 6-8

Ingredients

  • 1/4 cup nut butter, plain and unsweetened

  • 1/4 cup maple syrup, honey or agave

  • 1/4 cup coconut oil

  • 1 cup nuts and seeds (customize!)

  • 2 cups oats

  • 1 tsp cinnamon

  • Optional: 1Tbsp cacao powder to make it chocolate*

Directions

  1. Preheat the oven to 325°F (160°C). In a bowl, mix the nut butter, maple syrup and coconut oil well. You can even do this in a saucepan over low heat if your coconut oil and nut butter aren’t soft.

  2. Stir in the nuts, seeds, oats and cinnamon.

  3. Pack the granola down into a glass baking dish and bake for 20 minutes – line dish with baking paper if needed.

  4. Stir and pack the granola down again, then bake for another 15-20 minutes – watch it carefully.

  5. Remove from the oven and let it cool completely. This last step is important for getting crunchy clusters!

  6. Store in an airtight container for up to 2 weeks – even 3!
